Ingredients:
- 1 cup cooked quinoa
- 4 oz. baked or grilled salmon
- 1 cup chopped kale or spinach
- 1/2 cup sliced cucumber
- 1/2 cup sliced cherry tomatoes
- 1/4 cup diced red onion
- 1/4 avocado, sliced
- 1 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- Salt and pepper to taste
Instructions:
- Cook quinoa according to package instructions.
- Season the salmon with salt and pepper, and bake or grill until cooked through.
- In a large bowl, combine cooked quinoa, kale or spinach, cucumber, cherry tomatoes, and red onion.
- Drizzle with olive oil and balsamic vinegar, and toss to combine.
- Top the quinoa and vegetable mixture with the baked or grilled salmon and sliced avocado.
- Season with salt and pepper to taste.
